Construction of the largest full-service Marriott-branded hotel in Shanghai, Shanghai Marriott Hotel City Centre opened its doors on 24 November, 2011. Located aside People's Square and Park on Xi Zang Middle Road, the Shanghai Marriott Hotel City Centre enjoys a premium downtown location. Nanjing Pedestrian Street is a 30 second stroll from the hotel's street entrance. The BUND, Suzhou Creek and the lively Xintiandi are all within easy walking distance.





  1. To ensure compliance 70/ 30 points hygiene standards through out the operation


  2. To ensure compliance with brand standards throughout the operation


  3. To take temperatures of all refrigerators, freezers and chest freezers, record and maintain filing system according to standard; liaise with Engineering on defect equipment


  4. To take temperature of food being cooked daily: use “quick check” equipment for point 1-4; record by downloading in computer and maintain filing system


  5. To maintain filing system for pest control and chemicals


  6. To ensure recording of dish washing machine temperatures twice daily


  7. To participate in monthly 70/30 points food safety and hygiene inspections with Executive Chef and Executive Sous Chef


  8. To conduct daily cleaning checks in kitchens on a rotation schedule with respective kitchen managers


  9. To participate in weekly kitchen inspections with DFB and Executive Chef


  10.  Liaise with stewarding, conduct daily walks and weekly inspections to maintain and    

    Improve hygiene standards


  11. To conduct great food- safe food training for new hires and student trainees


  12. To conduct personal hygiene training for line cooks, new hires and student trainees


  13. Liaise with Engineering on hygiene concern service requests and gasket exchange progress; participate in weekly top 5 inspections on hygiene related issues


  14. To coordinate food testing with kitchens, food store and laboratory in case of new products and in case of food borne illness complaints

  15. Daily briefing with Executive chef or Executive Sous Chef
