MAJOR FUNCTION 主要功能:


Manages the day to day kitchen utility operations and staff. Areas if responsibilities include dish room operations, night cleaning, back dock cleaning and maintenance, banquet plating and food running. Strives to continual improve guest and associate satisfaction while maintaining the operating budget


合理有效的每日厨房设备清洁及管事部员工管理。区域职责包括配菜间,夜班清洁,后备区清洁和维护,宴会厅清洁及食品运转。在有效控制运营成本的同时要力求不断提高客人与员工的满意程度


 


MAJOR RESPONSIBILIES 责任概要:


To provide consistent services to internal and external customers, by adhering to and enforcing all Marriott Standards and Policies; training and guidance of trainees and attendants.


通过坚持和执行各种万豪标准政策;培训和指导其部门其他员工和实习生,为所有顾客提供始终如一的,高质量保证服务。


 


SPECIFIC DUTIES 工作任务:


  1. Directly responsible for sanitation of all culinary, storage and buffet areas

    直接负责厨房卫生设施,存储和自助餐区域
  2. Supervises dish room shift operations and ensures compliance with all food and beverage policies, standard and procedures

    监督管理盘碟存放间的轮班运转操作并确保与餐饮部的相关政策,标准,程序相一致
  3. Performs all duties of utility associates as necessary

  1. Follows proper handling and right temperature of all food products

  1. Inspects food holding and transport equipment repair and maintenance program

  1. Ensures compliance with food handling and sanitation standards

  2. Ensures compliance with all local, state and federal regulations

  3. Manages all equipment, china, glass and silver and ensures adequate clean supplies of each

  4. Knows and enforces proper cleaning routines for service ware, equipment, floors, etc

  5. Enforce proper breakdown procedure for banquets, restaurants, room service and associate’s cafeteria

  6. Conducts China, glass and silver inventories
    对瓷器,玻璃器皿和银器皿定期盘点管理
  7. Purchases appropriate supplies and manage inventories according to budget
    根据部门预算采购适当量的所需品及做好盘点工作
  8. Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met

    回顾员工的不同级别来确保其满足客人的服务需要,操作运营需求及财务目标
  9. To ensure the awareness & enforcement of all Marriott SOP and property LSOP

    熟知万豪集团所有的标准操作程序和本地标准操作程序
  10. Making sure the cleanness level is compliant with the brand standard guidelines

  11. Knows and implements Marriott's 70 Points of Hygiene and Safety Standards.

  1. Trains associates in safety procedures and supervises their ability to follow loss prevention policies to prevent accidents and control costs

  2. Effectively investigates, reports and follow up on associate’s accidents
    有效调查,报告及跟踪员工的意外事件
  3. To be responsible for maintaining outlet safety always

  4. Conduct a preventative maintenance inspection monthly
    制定月度预防性检查计划
  5. To implement a departmental daily 15 minutes training with associates
    执行贯彻部门每日15分钟培训计划
  6. Ensure utility staff is properly trained regarding sanitation, equipment handling and chemical usage

    确保给予部门员工关于卫生,设备操作及化学品的使用相关的培训
  7. Train supervisors and the correct process of progressive discipline

  8. Helps associates receive on-going training to understand guest expectations

  9. Responsible for associate’s reviews, ensuring appraisal in a professional and timely manner

  10. To ensure the efficient scheduling of supervisors and associates

  11. Periodically plan outside associate’s activity to promote teamwork
