Is responsible for planning of events that are organized outside the hotel. This involves not only running the catering facility during an event, but also handling all the preparation before the event and after as well. Should work closely with clients to ensure their event is a success, and follow up with them to get feedback after the event itself as well. Should be available to clients at all times during their events and out on the floor where is easily visible. Is responsible for the appearance of the catering set up before and during the event. Should work with clients to determine how many people are attending each event, what type of seating the client would like and a proper menu for the event. Is responsible for the daily operations of his/her catering facility. This means that the position must train and schedule staff to work during events knowing the skills of his or her staff and using that to help with selecting the event staff for each event.
The position should keep in constant contact with his vendors. These vendors do not include only food providers but also other services, such as linens and equipment suppliers. Is responsible for comparing the prices of different suppliers and making sure he is getting the best service for the money.
Employ, educate, and schedule catering staff, and be vigorously involved in the improvement of existing catering employees in service methods, guidelines, measures, and menu arrangement. Ensure the successful process of catering functions as well as work cost management, food cost control and grounding, operation, transportation, arrangement, and cleaning up of all events. Also maintain and develop marketing plans including a comprehensive event planning service to clients and detailed menu development. In addition is accountable for proactively soliciting and handling sales opportunities for Milano’s market.
Create reports and operating statements, operational budgets, review of the receivables and collection, and daily/monthly reports and is responsible for budgeting and maintaining financial targets and business goals.
Follow all company and safety and security policies and procedures; report accidents, injuries, and unsafe work conditions to manager; and complete safety training and certifications. Welcome and acknowledge all guests according to company standards, anticipate and address guests’ service needs, assist individuals with disabilities, and thank guests with genuine appreciation. Speak with others using clear and professional language. Develop and maintain positive working relationships with others, support team to reach common goals, and listen and respond appropriately to the concerns of other employees. Ensure adherence to quality expectations and standards (Marriott SOP and LSOP).
