Skills and Knowledge unique to this position;

¨  Knowledge of all F&B Standards, quality presentation, service and products and local health and sanitation standards

¨   Knowledge of menu planning

¨   Displays an understanding of the impact that menu choice has on productivity and profitability

¨   Displays proper and safe use of all equipment

¨ Strong leadership skills with focus on team’s development, training and progression

¨  Knowledge of Marketing Plan, area Competition, promotional concepts, F&B Costs and controls

¨ Demonstrate a proactive approach to driving covers to the restaurant in a competitive market place

¨  Responds appropriately to guest needs during hours of operation

¨  Knowledge of Italian Food and Italian restaurants trend in London

¨  Minimum of 2 years management experience in restaurant, preferably Italian. Ideally within a hotel.

¨   Ability to analyse financial information and prepare budget and outlet goals

¨   Ability to monitor and control costs

¨   Displays comprehensive computer skills

¨   Ability to assess quality control and adherence to service standards

¨  Ability to clearly define productivity standards with quality requirements and methods needed to obtain them

¨  Knowledge of and implementation of Laws relating to truth in Menus, liquor liability, local health and sanitation standards and contract law




¨   To manage implementation of revised or new Sheraton standards in product

¨ To maintain all Restaurant and Bar standards as per current European Minimum Standards

¨   To initiate and maintain timely recording of and follow-up of all bookings

¨   To manage Yield of inventories in accordance with Budget guidelines

¨   Communicate and administer selling strategy for F&B Outlets business to all internal parties

¨  Set yearly SMART objectives and goals for direct reports with approval from F&B Manager

¨   conduct quarterly appraisals with direct reports

¨ conduct performance or disciplinary related reviews with direct reports as necessary on a timely basis

¨   prepare and regularly update Job Descriptions for direct reports

¨   prepare and regularly update Departmental Training Manual

¨ in conjunction with Training Manager, develop and implement Training programme for Department

¨ create an environment in which direct reports can take responsibility and authority for their work and development


¨     Management experience in Restaurants and / or Beverage operations

¨     Operational management experience within a Food & Beverage Outlet

¨     Essential Italian culture including Food & Beverage.

¨     Competent in all aspects of Microsoft ware programmes.

 - Micros and ADACO systems preferred
